Pumpkin spice season is in full swing! These treats are full of fall flavor, have only five ingredients, and are super easy for kiddos to make. Bonus - they make a great healthy snack!
Pumpkin Fudge
Makes 30 servingsPrep Time: 15 minutesChill Time: at least 2 hours Total time: 2 hours 15 minutes
Ingredients:
2 cashew butter
2/3 cup pumpkin puree
2/3 cup coconut oil
4 tbsp maple syrup
1 tsp pumpkin pie spice
½ cup chocolate chips
Instructions:
Combine cashew butter and coconut oil in a medium sauce pan and whisk to combine.
Heat over low heat, whisking until smooth and well combined - about 5 minutes.
Add pumpkin puree, syrup, and pumpkin spice and mix well.
Spread into a parchment-lined 8x8 inch baking pan.
Refrigerate, covered loosely with plastic wrap, for at least 2 hours, or until fudge is very firm.
Cut into small squares.
If you like, melt the chocolate chips over low heat in a small saucepan, and drizzle over the set fudge, then refrigerate for another 30 minutes or until chocolate is set.
Recipe Notes:
Peanut, almond, and sunflower butters also work well in this recipe, if cashew is not your thing!
