Sweet Potato Nachos
Serves 4-6 Prep Time: 15 minutes Cook Time: 10-15 minutes Total time: 25-30 minutesIngredients:
- 2 large sweet potatoes
- 1 ½ cups cheddar cheese, grated
- ½ cup diced red pepper
- ½ cup black beans
- ? cup black olives
- ½ cup diced avocado
- ¼ cup sliced scallions
- Salt and pepper to taste
Instructions:
- Peel sweet potatoes and slice into thin rounds.
- Arrange in a single layer on a parchment lined baking sheet.
- Bake at 400 for 5-10 minutes, or until rounds are lightly browned and starting to soften.
- Top with shredded cheese, black beans, red peppers, and olives.
- Broil for 3-4 minutes, or until cheese is melted and bubbly, and starting to brown in places.
- Top with avocado and scallions.
